This recipe details how to prepare a cozy chuck roast, slow-braised until tender in a rich red wine and beef stock gravy.

preheat your oven to 275F. Season the chuck roast with salt and pep and heat oil in a large Dutch oven until it just begins to smoke. Work in batches to sear all sides of the meat until browned (2-3mins each side). Remove and set aside. Sautee the veggies. Once the veggies are translucent, add the garlic, stirring continuously until fragrant. Add the tomato paste and cook until itās a deep brick red color. Add the wine and beef stock. Return the beef to the pot and add the herbs. Cover and let it come to a boil. Then place the Dutch oven into the oven for 2.5-3hrs or until the meat is tender and shreds easily. Discard the herbs and transfer the beef and veggies to another plate. Reduce the leftover juices and add a knob of butter to create your gravy. Voila š
