This Quick & Easy Mapo Tofu recipe is a comforting and flavorful dish that serves 4-5. It's made with medium firm tofu, garlic, shallots, ginger, ground pork, and a variety of spices. Perfect for when you want Mapo tofu but may not have all the traditional ingredients on hand!

1: Cook the garlic in a wok over medium heat until fragrant. 2: Add in the ginger and pork and cook until pork is brown. 3: Add in the shallots and Sichuan peppercorn and cook until the shallots are translucent. 4: Add in the shao xing cooking wine and cook another 1-2 mins. 5: Add the hoisin sauce and do ban jiang. Stir fry for 1min over high heat. 6: Add the chicken stock and white pepper powder. Let the chicken stock come to a simmer. 7: Add the cornstarch slurry, combine well. It will thicken. 8: Gently add in the tofu and coat it in the sauce. 9: Cover and let simmer for 3-5 mins over low medium heat. 10: Mix in the scallions and serve!
