1: In bowl of stand mixer, combine milk, sugar, and yeast. Whisk to dissolve, then add in remaining dough ingredients (except butter) and mix for 5-8 mins using dough hook attachment. 2: Add in 4 tbsp of softened butter and continue to knead for 5-8 mins until butter is fully incorporated and dough is smooth. Add more flour if too sticky (it should be slightly tacky). 3: Form dough into a ball, place back into bowl, cover and let rise for 1.5-2hrs or until doubled in size. Meanwhile, combine brown sugar and cinnamon for filling. 4: Punch dough to deflate. On a lightly floured surface, roll out dough into a 12”x16” rectangle. 5: Spread 3 tbsp of softened butter over dough, then sprinkle filling over butter and massage it into the butter. 6: Roll dough into log starting at the 12” side. 7: Cut dough into 9 sections using knife or floss (I like to trim off the ends first, then section into 9 pieces). 8: Place into a lined or lightly buttered 9”x9” pan, cover and let rise for 30-45mins or until puffy. 9: Preheat oven to 350 and bake for 20-25mins or until golden brown. 10: Serve with your favorite icing.
