Begin with a 30-minute autolyse. Perform 2 rounds of coil folds, separating each round by 30 minutes. Laminate the dough to incorporate the chopped Calabrian chilies and honey. Follow this with 3 more rounds of coil folds, each separated by 45 minutes to 1 hour. Shape the dough, then transfer it directly into the fridge for an 18-hour cold proof. The next morning, score the dough and bake.
