Homemade Lorighittas pasta made without a machine, using a 2:1 ratio of flour to water for delicious results. This recipe serves 3-4 generously and requires some handiwork and patience to create perfectly twisted pasta shapes.

1: Pour the flour onto a clean work surface, make a well in the middle, and add in the water. 2: Using a fork, slowly start pulling the flour in from the sides. 3: Once most of the water has been absorbed, start kneading by hand for about 8-12 minutes. 4: Wrap the dough ball in plastic wrap and let rest at room temperature for 1 hour. 5: Cut off a small section of dough, roll it into a thin rope, wrapping it around 3 fingers twice. 6: Nip off the excess and pinch the two loose ends together. 7: Twist the two loops around each other and place the pasta onto a baking tray dusted with semolina flour. 8: Repeat with remaining dough, combining excess to make more lorighittas.
