1: Boil some water and salt it generously, then cook the orecchiette pasta according to the package instructions, making sure to reserve some leftover pasta cooking water. 2: In a large skillet over medium-high heat, add the olive oil. Once heated, add the sausage and avoid moving it around for 3-5 minutes until it browns. 3: Break up the sausage using a spatula and continue to cook until done. 4: Add garlic, shallots, and anchovy and cook for 3-5 minutes until shallots turn translucent and the anchovy breaks down. 5: Add chicken stock to deglaze the pan, then add broccoli rabe. Cover for 1-2 minutes so the broccoli rabe wilts. Check for seasoning and add salt, pepper, and chili flakes to taste. 6: Add the cooked pasta to the skillet and combine everything. Add a little bit of the reserved pasta cooking water and Parmesan. Combine everything then serve!
