A soft, fluffy, buttery brioche made with pumpkin and pumpkin spice, sweetened with honey. Great on its own or as french toast.

1: Add all dough ingredients into the bowl of a stand mixer, except butter. Using the dough hook attachment, mix for 5-8 mins until the dough comes together. 2: Add 1-2 pieces of butter at a time until fully incorporated and mix for 10-20 mins or until a window pane is achieved. 3: Shape the dough into a ball, place into a bowl, cover, and let rise at room temp for 30 mins to 1 hr. 4: Place it into the fridge for an overnight cold proof. 5: The next morning, divide the dough into 8 sections and shape them into balls. Place into a 9"x5" loaf pan, cover, and let it rise for 1 hr or until it fills up ~85% of the pan. 6: Preheat the oven to 350F. 7: Brush the loaf with egg wash and top with pumpkin seeds (optional). 8: Bake for 30-35 mins or until the top is deeply golden brown.
