1: The night before, combine all dough ingredients in the bowl of a stand mixer except butter and matcha. Using the dough hook attachment, knead on medium speed for 5 mins. Then add in butter and knead until smooth, 10-12 mins. 2: Divide the dough in half and incorporate the matcha into one of the halves. Knead until evenly distributed. 3: Form both doughs into a ball, place into separate bowls, cover, let rise at room temp for ~1 hr or until they’ve grown in size but aren’t fully doubled. Place in the fridge overnight. 4: The next morning, combine all filling ingredients (it should be spreadable). 5: Doing one dough at a time, roll it out into a 10”x9” rectangle. Spread half of the filling over dough and roll the dough into a log starting from the 10” side. Divide the log into 6 rolls and place into a greased 9”x13” pan. Repeat with the other dough. Cover and let rise for 30 mins-1 hr until noticeably puffy. 6: Preheat the oven to 350°F, bake for 22-28 mins or until the tops are lightly golden brown. Serve with your favorite icing.
