This homemade pasta recipe includes both regular egg pasta and spinach pasta, perfect for a Sunday cooking session. The dough is made with 00 flour, eggs, and fresh spinach, creating a fresh and delicious meal serving 3-4 people.

1: Blanch the spinach. Drain, then blend in a blender until smooth. Add a splash of water to make it easier to blend. 2: Make one pasta dough at a time. Pour the flour onto a clean work surface, make a well in the middle, and add in the rest of the ingredients. Using a fork, beat the eggs, then slowly start pulling the flour in from the sides. Once there is no more runny egg, start kneading by hand. Keep going until it’s smooth. If it’s too dry/hard, lightly wet your hands to help soften. If the dough is too soft, add more flour. 3: Wrap the dough ball in plastic wrap and let rest at room temp for 1hr. 4: Divide each dough ball in half and roll each out into a thin rectangle, about 1mm thick. You want to be able to see light through it. 5: Trim any uneven edges. Roll it up, then cut to your desired width. 6: Place the pasta onto a baking tray that’s been dusted with semolina flour. Let it dry for 20-30mins then cook.
