Brioche Caramel Custard Buns

This recipe makes 8 buns, featuring a dough made from bread flour, whole milk, sugar, yeast, and butter, along with a custard filling of eggs, vanilla, and milk. A sweet topping of caramel and optional berries adds the finishing touch.

1: To the bowl of a stand mixer, add all dough ingredients except for butter. Using the dough hook attachment, mix until the dough comes together. Then add the butter a few pieces at a time and knead until fully incorporated. 2: Let the dough rise for 1.5-2hrs or until doubled in size. 3: Meanwhile, make your custard. Whisk together all custard ingredients except for milk. Then slowly add in the hot milk and whisk until combined. Continue whisking over a double boiler until the custard thickens (this took me 15-20mins). Remove from heat, cover, and let it cool. 4: Divide the dough into 8 equal sections, shape them into balls, and gently flatten so they are about 3.5-4” in diameter. 5: Place the dough inside 4” ring molds (optional). Cover and let rise for 30mins-1hr or until the dough is noticeably puffy. 6: Preheat the oven to 350F. Make an indent in the center of each bun, fill it with custard, and brush the edges with egg wash. Bake for 15-17mins or until the custard has set and the buns are golden brown. 7: Microwave the caramels in 10sec increments until fully melted and drizzle over the baked buns. Top with powdered sugar, more caramel pieces, and any other toppings you desire.
