Quick & Easy Mapo Tofu

This Quick & Easy Mapo Tofu recipe is a comforting and flavorful dish that serves 4-5. It's made with medium firm tofu, garlic, shallots, ginger, ground pork, and a variety of spices. Perfect for when you want Mapo tofu but may not have all the traditional ingredients on hand!

What you need

garlic clove

shallot

ginger

lb ground pork

cup chicken stock

tbsp hoisin sauce

tbsp shaoxing wine

white pepper

salt

tbsp white peppercorns

scallion
tbsp cornstarch

tbsp water
Instructions
1: Cook the garlic in a wok over medium heat until fragrant. 2: Add in the ginger and pork and cook until pork is brown. 3: Add in the shallots and Sichuan peppercorn and cook until the shallots are translucent. 4: Add in the shao xing cooking wine and cook another 1-2 mins. 5: Add the hoisin sauce and do ban jiang. Stir fry for 1min over high heat. 6: Add the chicken stock and white pepper powder. Let the chicken stock come to a simmer. 7: Add the cornstarch slurry, combine well. It will thicken. 8: Gently add in the tofu and coat it in the sauce. 9: Cover and let simmer for 3-5 mins over low medium heat. 10: Mix in the scallions and serve!View original recipe
