What you need
oz sourdough starter

oz salt

oz water

oz bread flour
Instructions
1. Prep your starter. 2. Mix flour and water, cover, and let rest (autolyse) for 30mins. 3. Add your levain to the dough and roughly combine, then add in your salt and remaining water. Mix/perform slap and folds until everything comes together and dough achieves window pane. 4-8. Perform a series of stretch and folds or coil folds each separated by 30mins-1hr depending on the temperature of your environment. 9. Shape the dough and place into a banneton. 10. Cover and place into the fridge overnight. 11. Score and bake.View original recipe
