Pistachio Cardamom Buns

These stunning twisty buns are made with a brioche dough and filled with a brown sugar & cardamom mixture. Just the right amount of sweetness and so fun to make!

What you need

cup sugar

tsp kosher salt

cup water

cup butter

pistachio

tsp cinnamon

instant yeast

oz unsalted butter

tsp cardamom

cup brown sugar

organic eggs

cup light-brown sugar

cup full fat milk
Instructions
1: In the bowl of a stand mixer, combine all dough ingredients except for butter. Knead for 5-8 mins until dough comes together. 2: Add in butter and knead for 8-10 mins until dough is smooth. Form into a ball, place back into bowl, cover and let rise at room temp for 1-1.5 hrs until almost doubled in size, then place in fridge overnight for a slow rise. 3: The next morning, punch down dough, remove from bowl and divide into 10 sections. Form into balls and cover, let rest for 20 mins. 4: Meanwhile, combine filling ingredients and set aside. It should be easily spreadable but not liquidy. 5: Roll each ball into a flat oval, about 7-8” long, 4-5” wide. Spread a thin layer of filling on top. Make slashes lengthwise about 7-8 times, ensuring not to cut past the end of dough. 6: Roll dough at an angle, then take both ends and bring them together. Pinch to stick. 7: Place on a parchment lined baking sheet and repeat with remaining dough, using 2 baking sheets. 8: Preheat oven to 425F, cover the dough and let rise for 30 mins until puffy. 9: Combine 1 egg + 1 tbsp milk for egg wash and brush over dough. Bake for 12-15 mins or until tops are golden brown. 10: While buns are cooling, combine 1/4 cup brown sugar and water over medium heat until dissolved. Set aside to cool, then brush sugar glaze on buns and sprinkle pistachios on top.View original recipe
