Super Soft Sourdough Pita

This super soft sourdough pita recipe is easy to make and yields fluffy pitas that are fun to dimple. Perfect for Ramadan and a delightful twist on Turkish pita that will impress everyone. The dough is made with bread flour, water, and levain, topped with egg yolk and yogurt, then baked until golden brown.

oz butter

oz salt

tbsp honey

egg yolk

tbsp greek yogurt

Instructions
1: In the morning, combine all dough ingredients except butter until no dry spots remain. Cover and let autolyse for 30 mins. 2: Add in melted butter. Knead and/or perform slap and folds until incorporated. Dough will be sticky. Place into a bowl, cover, and rest for 30 mins. 3: Perform a stretch and fold for each side. Cover and let rest for another 30 mins. 4: Perform a coil fold. Cover and let rest for 1 hr. 5: Perform another coil fold. Cover and let rest for 1 hr. 6: The dough should look smooth and show signs of fermentation. If not, perform one more coil fold and rest for 30 mins-1 hr. 7: Dump dough onto a floured surface and divide into 3 sections. Round each piece and place onto separate baking trays lined with parchment paper and dusted with semolina flour. 8: Cover and let proof for 1-2 hrs. 9: Once dough is puffy, preheat the oven to 450F. Mix 2 yolks with greek yogurt and pour a little over the dough. Spread it across the surface with your hands then dimple the dough. 10: Sprinkle with sesame seeds and transfer the baking pan to the oven. Immediately lower oven temp to 350F.
