oz kosher salt

tbsp unsalted butter

tbsp honey

oz bread flour

cup sour cream

oz sugar

tbsp milk

oz water

active dry yeast

organic eggs

fl oz egg yolk

cup full fat milk
Instructions
1: Add tangzhong ingredients to a pan. Whisk until there are no flour lumps. Turn stove to medium heat and stir until thick and creamy like mashed potatoes. Take off heat and let cool for 5 minutes. 2: Once cooled, add tangzhong and everything else (except butter) to a large bowl. Knead by hand or using a stand mixer until dough comes together. Then add in butter and knead until incorporated. 3: Form dough into a ball, place back into the bowl, cover, and let rise for 1.5-2 hours or until doubled in size. 4: Grease a 9'x13' pan with butter. 5: Punch dough down, divide into 12 sections, form into balls, and place into the pan in a 3x4 arrangement. 6: Cover and let rise for 30-60 minutes until noticeably puffy. 7: Preheat the oven to 375°F. Brush buns with egg wash (1 egg + 1 tbsp milk). 8: Bake for 25-30 minutes or until the top is golden brown. 9: Once out of the oven, brush with 2 tbsp melted butter + 1 tbsp honey.View original recipe
