Brown Butter Banana Cinnamon Rolls

These are the most insane cinnamon rolls ever, combining the flavors of brown butter banana bread with classic cinnamon rolls. The dough is infused with ripe mashed banana, making it wonderfully sweet and tender, while the filling is a delightful mix of cinnamon brown sugar, banana slices, and chocolate chips.

What you need

tsp nutmeg

egg yolk

oz instant yeast

tsp salt

oz dark brown sugar

tbsp cinnamon

oz mini chocolate chips

oz bread flour

banana

oz butter

cup full fat milk
Instructions
1: Brown your butter. Start with 2 sticks or 226g. Once cooled and solidified, measure out 70g for the dough and use the rest for the filling. 2: Combine all dough ingredients in the bowl of a stand mixer except butter. Using the dough hook attachment, knead on medium speed until the dough comes together. Then add the butter and knead until smooth. The dough should be tacky but manageable. 3: Proof the dough for 1.5-2 hours until doubled in size. Meanwhile, prep the filling by combining dark brown sugar, cinnamon, nutmeg, and salt in a bowl. Slice a banana. 4: Roll out the dough to be 12”x12”. Smear the brown butter over the dough, then spread the cinnamon sugar mixture over the top. Add banana slices and chocolate chips. 5: Form the dough into a log. Divide it into 7 sections and place them in an 8.5” round pan. Cover and let rise for ~30 minutes until noticeably puffy. 6: Preheat the oven to 350°F and bake for 22-28 minutes or until the tops are lightly golden brown.
