Cinnamon Coffee Buns

A simple braided bun made with a brioche-style dough, filled with brown sugar, cinnamon, and coffee. This delicious recipe yields 8 buns, perfect for breakfast or a sweet treat.

What you need

oz bread flour

oz granulated sugar

oz instant yeast

oz kosher salt

oz butter
egg

egg yolk

oz butter

oz dark brown sugar

tsp cinnamon

tsp instant coffee granules
Instructions
1: In the evening, add all dough ingredients into the bowl of a stand mixer except for butter. 2: Using the dough hook attachment, mix for 5 mins until the dough comes together. 3: Add the butter and mix for 8-10 mins or until a rough window pane is achieved. 4: Shape the dough into a ball, place into a bowl, cover, and let rise for 30mins-1hr at room temp until it’s slightly grown in size. 5: Place it into the fridge overnight for a long, cold proof. 6: The next morning, make your filling by combining all filling ingredients; it should form a paste. 7: Punch dough to deflate and roll it out into a 20”x14” rectangle. 8: Spread the filling over 2/3 of the dough. 9: Take the side that doesn’t have filling and fold it over like an envelope, then fold the remaining flap. 10: Trim uneven ends and divide into 8 strips along the 14” side. 11: Take one strip and cut 2 slits into it, braid, and roll it up. 12: Place into a lightly greased jumbo muffin pan. 13: Cover and let rise for ~45mins or until noticeably puffy. 14: Preheat the oven to 350F. 15: Brush with egg wash and bake for 22-25mins or until the top is golden. 16: Top with your favorite icing.View original recipe
