What you need

oz dried shiitake mushrooms

in ginger

garlic clove

shallot

star anise

cup shaoxing wine

tbsp sugar

tbsp sweet soy sauce

tbsp dark soy sauce

tbsp oyster sauce

tsp 5 spice powder

white pepper

Instructions
1: Rehydrate the mushrooms by soaking in hot water for at least 2 hrs. Then squeeze out water and chop into small pieces. 2: Heat wok over medium-high heat, add in shallots, garlic, and ginger. Cook until shallots become translucent. 3: Add in mushrooms and cook for 2 minutes. 4: Add in pork and cook until opaque. Add in the rest of the ingredients plus 2 cups of water (use mushroom soaking water, making sure to leave any sediment behind). Bring to boil. 5: Once boiling, cover, turn heat to low and simmer for 20 minutes. 6: After 20 minutes, the sauce should be reduced. If too liquidy, turn heat up and reduce further.
