Brown Butter Chocolate Chip Oatmeal Raisin Cookies

What you need

tbsp unsalted butter

cup light-brown sugar

egg nog

tbsp vanilla extract

tbsp molasses
cup ap flour

tsp baking soda

tsp cinnamon

tsp salt

cup old fashioned rolled oats

cup raisin

cup chocolate chips
Instructions
1: In a saucepan, melt butter over medium heat stirring constantly. It will begin to bubble and foam, keep stirring. After 5-8 mins, bubbling will subside a little and butter will start to turn a deep amber color. Take butter off stove and transfer to bowl. Place in fridge to harden slightly so it's no longer melted. 2: Meanwhile, whisk together flour, baking soda, cinnamon, and salt. Set aside. 3: Using hand mixer or stand mixer, beat butter and both sugars until smooth. Add eggs. Beat until combined. Then add vanilla and molasses. 4: Add dry ingredients to wet. Mix until no dry spots remain. Add in oats, raisins, and chocolate. Dough will be very thick. 5: Place dough in fridge for at least 30 mins and line a baking sheet with parchment paper. 6: Preheat oven to 350°F. 7: Roll balls of dough (about 2-3 tbsp) and place on baking sheet. Make sure there is enough room between each ball. 8: Bake for 12 mins or until edges are lightly golden brown. Center will be very soft but will set when they cool.
