What you need

bunch parsley

bunch rosemary

tsp salt

celery stalk

yellow onion

cup beef stock

fl oz dry red wine

lb chuck roast

tbsp tomato paste
head fresh garlic

clove garlic clove

fl oz extra-virgin olive oil

Instructions
preheat your oven to 275F. Season the chuck roast with salt and pep and heat oil in a large Dutch oven until it just begins to smoke. Work in batches to sear all sides of the meat until browned (2-3mins each side). Remove and set aside. Sautee the veggies. Once the veggies are translucent, add the garlic, stirring continuously until fragrant. Add the tomato paste and cook until it’s a deep brick red color. Add the wine and beef stock. Return the beef to the pot and add the herbs. Cover and let it come to a boil. Then place the Dutch oven into the oven for 2.5-3hrs or until the meat is tender and shreds easily. Discard the herbs and transfer the beef and veggies to another plate. Reduce the leftover juices and add a knob of butter to create your gravy. Voila 😊View original recipe
