What you need

oz kosher salt

oz instant yeast
egg

oz unsalted butter

oz bread flour
oz sweet potato puree

tbsp milk

tbsp butter

tsp fine sea salt
fl oz liquid honey

egg

cup full fat milk
Instructions
1: To the bowl of a stand mixer, add all dough ingredients except for butter. Using the dough hook attachment, mix until the dough comes together. Then add the butter and knead until smooth. 2: Shape the dough into a ball, place into a bowl, cover, and let rise for 1-2hr or until doubled in size. 3: Divide the dough into 18 equal sections and shape them into balls. Cover and let rest for 20 mins. 4: Doing one at a time, shape each dough ball as shown in the reel. As you’re rolling the dough out, make sure it’s no wider than 3.5” so they all fit in your 11”x11” pan. Once you roll it up into a small log, seal the end well. 5: Cover and let rise for ~30mins-1hr or until the dough is noticeably puffy. 6: Preheat the oven to 350F, brush the top with egg wash, and bake for 22-26mins or until golden brown. 7: After baking, brush the bread with some honey butter and top with flaky salt.View original recipe
