White Bean Sausage & Kale Soup

A hearty and filling white bean sausage and kale soup that is perfect for meal prep and can be enjoyed all year long. Made in one pot, it combines various vegetables, beans, and savory sausage for a comforting dish.

What you need

cup chicken broth

bay leaves

yellow onion

pepper

tbsp fresh thyme

cup dry white wine

tbsp oregano

tsp salt

italian sausage

celery

tbsp red pepper flake

carrot

clove garlic clove

can cannelini beans

cup lacinato kale
Instructions
1: In a large pot over medium high heat, pour in 1-2 tbsp of oil. Cook sausages and break into smaller chunks. Remove and set aside. 2: Add in onion, carrots, celery, and garlic. Season with salt and pepper. Cook for 5 minutes until vegetables become slightly softened. 3: Add in tomato paste. Cook for 2-3 minutes until it turns a deep red color. Then add in white wine and cook for another 2-3 minutes. 4: Add in beans, bay leaves, thyme, oregano, and chicken broth (just enough so that everything is submerged). Bring to boil, then turn heat down to a simmer and cook for 15 minutes or until vegetables are soft. 5: Remove bay leaves. Ladle out 2-3 cups of soup into a blender and blend until smooth. Return to pot. 6: Add in sausage, kale, and red pepper flakes. Check for seasoning and adjust if necessary. Also add more broth if you want it thinner.
